This is a delicious make ahead, dessert, snack or even breakfast option. You could add protein powder or Greek yogurt to up the protein content if you’re making this a meal.
Serves 1
Ingredients
1 glass mason jar or similar container
2 Tablespoons chia seeds
1/2 cup milk of choice (I used cashew milk here)
1 Tablespoon cocoa powder
1 teaspoon maple syrup
1 teaspoon vanilla extract
pinch of salt
Toppings (optional)
1 Tablespoon chopped pecans
1/2 banana, sliced
Other ideas with cocoa powder
peanut butter + sliced banana
cocoa powder + raspberry
avocado (trust me!)
Sans cocoa powder
raspberries + blueberries
peanut butter + jelly
1/4 cup pumpkin puree + pumpkin pie spice
Directions
-
Add milk to jar then add the rest of the dry ingredients except for the chia seeds.
-
Add chia seeds and stir well until combined.
-
Add additional toppings as desired. I added chopped pecans and sliced banana here.
-
Place in the refrigerator overnight. Pudding should be thickened and ready to eat by the morning.
